I am wondering if it is possible to control the thickness of an area element with a variable defined along an axis, as it is possible with beams cross-sections.

Hello Andrei,
I can only confirm your assumption. As far as I know, you can use the variables along an axis (gaxv) only for structural lines with cross section.
You could set the thickness of a structural surface to zero and define the edge thickness, this will interpolate the intermediate values.
